The Daub Backmeister Range offers you a combination of maximal baking surface with minimal space requirements at a favourable price. The Backmeister oven is suitable for smaller bakeries, which have to produce high product quantities, baking directly on hot plates (also for small batches). This system can be delivered with semi/fully automatically loading systems, up to twelve decks.
Radiation heat results in:
- a better and longer raising of the dough in the oven
- better cracking of the dough
- better steam influence
- better fermentation tolerances
- higher moisture content of the finished product
by switching on the turbo fan, convection heat is additionally introduced into the baking chamber. By the simultaneous use of both heating systems:
- heat transition is intensified (at beginning or end of baking)
- even the sides of the baked goods have developed a deeper browning
- a high-temperature effect is produced which normally can only be reached by use of pre-baking ovens
- the dough reaches a greater volume and higher raise, so that the deck can be loaded more densely
MAIN FEATURES:
Baking surface:
- even baking temperature, no matter where in the deck
- more baking surface on less floor area (up to 4,4 m2 baking surface for 1 m2 floor area)
- possible deck widths: 1600, 2000 or 2400 mm
Number of decks:
- possible number of decks: 3, 4, 5, 6 or even 7
- higher baking chambers but minor overall height by means of a very compact design
- problem-free loading
